Cheese Potatoes

The go-to meal that my parents would make when my sister and I were growing up is a dish we call ‘cheese potatoes’. It would essentially be cutting up potatoes, boiling them for a little bit, straining the water out, and then frying them with a lot of cheddar cheese or pepper jack cheese in a cast iron pan on the stove. You wind up with gooey, melty cheese on parts and then also the very crispy bits on the pan themselves. It’s delicious… probably clogs up your arteries in one go but really good. My sister and I loved it. My best friend growing up — huge fan. I remember his asking in advance if that was what we were going to be having. He and I played youth soccer together. Sometimes after soccer games that would be waiting once we went back home. I made it a couple times in college. Now that I’m a little more health conscious about this stuff, I don’t really. I’ll have it when I am back home because my mom will make them. I can have a couple servings and then just spend the next hour or so moaning around on the couch.
