Earth Oven Lamb

In my 20s, I took a two-week wilderness survival course with my dad. It started in Escalante National Monument, Utah. The first two and a half days, we didn’t eat anything. It was called ‘impact’, to teach your emotions your body can go without food for a long time. After that, we got half a banana and some Gatorade — that’s it. Then, we had to figure out how to get to a location on a map using a compass. At that camp, the next phase was to slaughter a sheep and use all the parts. I volunteered to actually slit the throat. We held the sheep and drained the blood. We made jerky that we hung on lines to dry… it wasn’t that successful. But the big thing was we took the legs, dug this pit, and made a big fire. We lined the bottom with coals, green grass, canvas. We had the two legs and whole vegetables in there. There were no spices, just salt. We buried them and had a fire all day. The meat came out super tender and the vegetables were really flavorful. It was a whole day’s worth of meals for 12-15 people.
